1½ | pounds 85/15 ground beef |
8 | ounces dry penne pasta |
2 | cloves garlic, minced |
2 | cup marinara |
¾ | cup shredded mozzarella cheese |
¼ | cup shredded parmesan cheese |
1 | cup part skim ricotta cheese |
1. Cook penne pasta according to package directions. Drain.
2. While pasta cooks, heat a large nonstick skillet over medium-high heat. Add beef and cook until browned, 5-6 minutes, stirring to crumble. Stir in garlic and cook for 30 seconds. Add pasta to meat mixture in pan. Stir in marinara. Reduce heat to medium.
3. Combine half the shredded mozzarella, half the Parmesan and the ricotta in a bowl. Drop by heaping tablespoons over meat mixture. Sprinkle remaining cheese over meat mixture. Cover and cook until cheese melts, about 5 minutes.

Beefy Skillet Penne – Reduced Calories Variation:
Prepare, bake and serve Beefy Skillet Penne recipe according to instructions, except in step 2, before adding the garlic: drain cooked beef well, rinse beef in colander under tap water, and return to pan. Allow beef to regain temperature before stirring in garlic.
