1½ | pounds cooked sausage of your choice, cut into 1-inch pieces |
1 | pound baby potatoes, cleaned, washed and cut in half |
3 | large carrots, peeled and chopped into 1-inch pieces |
1 | medium red bell pepper, cut into 1-inch pieces |
2 | large ears of corn, cleaned and cut into thirds |
1 | teaspoon salt or creole seasoning |
¼ | teaspoon black pepper |
1 | tablespoon canola oil |
1. Preheat oven to 400°F. Grease large baking pan.
2. In large bowl, combine all ingredients and toss until sausage and vegetables are evenly coated with oil and spices. Transfer to prepared baking pan.Roast until vegetables are tender, stirring occassionally, 30-35 minutes.
