Roasted Sausage and Vegetables

Serves: 6
Start to Finish: 45 minutes

pounds cooked sausage of your choice, cut into 1-inch pieces
1pound baby potatoes, cleaned, washed and cut in half
3large carrots, peeled and chopped into 1-inch pieces
1medium red bell pepper, cut into 1-inch pieces
2large ears of corn, cleaned and cut into thirds
1teaspoon salt or creole seasoning
¼teaspoon black pepper
1tablespoon canola oil

1.  Preheat oven to 400°F. Grease large baking pan.
2.  In large bowl, combine all ingredients and toss until sausage and vegetables are evenly coated with oil and spices. Transfer to prepared baking pan.Roast until vegetables are tender, stirring occassionally, 30-35 minutes.
