2 | cups fresh tomatoes, diced (or cherry tomatoes, halved) |
2 | cups avocado, diced |
2 | ounces pepper jack cheese, diced |
2 | tablespoons lime juice |
1 | tablespoon olive oil |
½ | teaspoon salt |
½ | teaspoon ground black pepper |
6 | cups lettuce, washed and chopped |
1. In large bowl combine tomatoes, avocados, pepper jack cheese, lime juice, olive oil, salt and pepper. Mix well. Serve on bed of lettuce.
