10 | ounces penne, dry |
1/3 | cup raisins |
3 | cups broccoli, chopped |
2 | tablespoons olive oil |
3 | cloves garlic, minced |
1¼ | pounds chicken breast, cubed |
½ | teaspoon salt |
½ | teaspoon black pepper |
½ | cup sliced almonds, toasted |
1. Cook penne according to the package directions.
2. Cover raisins in warm water and soak for 10 minutes. Drain and set aside.
3. Steam broccoli in basket steamer for about 10 minutes, until crisp tender.
4. Heat oil in skillet over medium heat until shimmering. Add garlic and cook for 30 seconds. Add chicken, salt and pepper and sauté until golden brown and cooked through, about 10 minutes.
5. Toss together penne, raisins, broccoli, chicken and almonds.
