For Flour Paste:

For Dough:
| ½ | cup whole milk |
| 1 | large egg |
| 11 | ounces (2 cups) bread flour |
| 1½ | teaspoons instant or rapid rise yeast |
| 2 | tablespoons sugar |
| 1 | teaspoon salt |
| 4 | tablespoons butter softened |
| ½ | tablespoon butter, melted |
1. For Flour Paste: Whisk together water and flour in small microwavable bowl until smooth. Microwave 60 to 80 seconds, whisking to smooth every 20 seconds, until mixture thickens to a consistency that forms a mound when drizzled into bowl.
2. For Dough: In bowl of stand mixer, whisk flour paste and milk together until smooth. Whisk in egg.Add flour and yeast. Fit mixer with dough hook. Turn to low speed and mix until dough just comes together. Let stand 15 minutes. Add sugar and salt. Knead dough on medium speed 5 minutes. With mixer running, drop in softened butter 1 tablespoon at a time. Knead 5 more minutes, scraping bowl and dough hook occasionally. Form dough into ball by hand and transfer to lightly greased bowl. Dough will be sticky. Cover with damp towel and rise in warm place until doubled in volume, about 1 hour.
3. Grease 9-inch round cake pan and set aside. Lightly grease hands. Punch down dough and transfer to lightly greased counter. Cut dough into quarters. Working with one quarter of dough at a time, stretch and press dough into 8×5 inch rectangle. Cut into 3 equal size pieces. Working with 1 piece at a time, press and stretch dough into 8×1 inch rectangular strip. Roll dough to form a tight cylinder, starting on the short side. Arrange rolls in pan seam side down with 10 on the outer circle and 2 in the center. Cover with damp towel and rise in warm place until doubled in volume, about 45 minutes.
4. Pre-heat oven to 375°F. Bake rolls on center rack 25 to 30 minutes, until deep golden brown. Cool in pan 5 minutes, then transfer rolls to wire cooling rack. Brush tops with melted butter.
Notes: Rolls freeze very well. To refresh, allow to defrost completely, wrap in foil and heat in 350°F oven for 15 minutes.
