Forgotten Meringue Cookies

Makes: 48 cookies
Prep: 20 minutes
Start to Finish: overnight

3large egg whites
1cup granulated sugar
12large ounces chocolate chips
1cup chopped pecans
1teaspoon vanilla extract

1.  Preheat oven to 325°F.  Line 2 cookie sheets with parchment paper.
2. Combine egg whites and sugar in large bowl.  Beat until stiff.  Fold in chocolate chips, pecans and vanilla.  Drop by spoonfuls onto cookie sheets 1-inch apart.
3.  Place cookie sheets in oven.  Immediately turn off oven.  Leave cookies in oven overnight.
