| 3 | tablespoons almond flour |
| 3 | tablespoons fresh grated Parmesan cheese (can substitute shredded mozzarella) |
| 1 | large egg |
| ½ | teaspoon baking powder |
| ½ | teaspoon xanthan gum (optional) |
| ⅛ | teaspoon salt |
| 2 | teaspoons unsalted butter |
1. Combine all ingredients in bowl and mix until completely blended. Split batter evenly between 2 small microwavable bowls. Microwave for 90 seconds. Transfer breads to plate and let cool 1 minute. Slice breads in half. Toast each slice in toaster oven until browned to taste.
Notes. Add a pinch of rosemary or sage for additional flavor. Works well in place of English muffins or bread for sandwiches.
