Keto 5-minute bread

3tablespoons almond flour
3tablespoons fresh grated Parmesan cheese (can substitute shredded mozzarella)
1large egg
½teaspoon baking powder
½teaspoon xanthan gum (optional)
teaspoon salt
2teaspoons unsalted butter

1.   Combine all ingredients in bowl and mix until completely blended.  Split batter evenly between 2 small microwavable bowls. Microwave for 90 seconds. Transfer breads to plate and let cool 1 minute. Slice breads in half. Toast each slice in toaster oven until browned to taste.
Notes. Add a pinch of rosemary or sage for additional flavor. Works well in place of English muffins or bread for sandwiches.
