Roasted Pork Loin with Sweet Potatoes, Apples and Pears

pound pork loin
2tablespoons olive oil, divided
1teaspoon salt
½teaspoon ground black pepper
1tablespoon Italian seasoning
2medium apples, cored and sliced into 8 pieces each
1medium pear, cored and sliced into 8 pieces
1large sweet potato, peeled and cubed
4cloves garlic, cut into quarters

1.  Preheat oven to 350°F. Grease a 9×13-inch baking dish.
2.  Pat pork loin dry.  Rub with 1 tablespoon olive oil. Season with ½ teaspoon salt and pepper. Lay pork loin diagonally in prepared baking dish.  Sprinkle Italian seasoning over pork loin.
3.  In large bowl, toss apples and pears with ½ tablespoon oil and ¼ teaspoon salt.  Arrange fruit in one corner of baking dish.
4.  In large bowl, toss sweet potatoes with ½ tablespoon oil and ¼ teaspoon salt.  Arrange sweet potatoes in remaining empty corner of baking dish.
5.  Sprinkle garlic over apples, pears and sweet potatoes.
6.  Bake for 45-50 minutes, until cooked through.  Remove from oven and let rest 5 minutes.  Slice into ½-inch slices.
Notes: For a perfectly oven-baked pork loin, cook in a preheated oven at 350°F for 7-8 minutes per 4 ounces of pork loin.
