4 | slices bacon |
2 | large eggs |
2 | slices bread |
½ | cup avocado, mashed |
2 | tablespoons shredded cheddar cheese |
salt and pepper to taste |
1. Cut bacon strips in half. Lay halved bacon strips out in cool pan. Place pan over medium heat. Cook until bacon has begun to release some of its fat and to buckle and curl. Flip bacon and cook until lightly crisped on bottom side. Flip again and cook to desired crispness. Remove bacon from pan and set on a folded paper towel on a plate.
2. Add eggs to hot bacon grease in pan. Cook until white is set, about 3 minutes. Flip and cook until yolk is desired firmness. Remove pan from heat.
3. While eggs are cooking, toast bread.
4. Assemble as follows: spread ¼ cup avocado onto each slice of toasted bread. Top each with 1 cooked egg. Sprinkle 1 tablespoon cheese over each egg. Top with 2 slices bacon. Season with salt and pepper to taste.
