German Apple Pancake

Serves: 3

1tablespoon unsalted butter
2large apples, peeled and diced
¼cup brown sugar
¼teaspoon ground cinnamon
¾cup all-purpose flour
1tablespoon granulated sugar
½teaspoon salt
3large eggs, beaten
1cup whole milk
1teaspoon vanilla extract
1teaspoon lemon juice
 powdered sugar for sprinkling

1.  Pre-heat oven to 425°F.
2.  In large oven proof skillet, melt butter over medium heat.  Add apples, brown sugar and cinnamon to skillet.  Cook, stirring occasionally, until apples are soft and lightly browned, about 10 minutes. 
3.  While apples are cooking, prepare batter.  In medium bowl combine flour, granulated sugar and salt.  In a small bowl whisk together eggs, milk and vanilla extract.  Pour milk mixture into flour mixture and whisk until just combined.  Set aside until apples are finished cooking.
4.  Remove skillet from heat.  Stir lemon juice into apple mixture.  Pour batter into skillet, starting by pouring in a circle around the outer edge of the apples and then filling in the center.  Place skillet in oven.
5.  Bake, uncovered, 18 to 20 minutes, until edges are puffed up and lightly browned.  Remove skillet from oven.  Flip pancake out onto large cutting board.  Scrape any apples left in the skillet out with a spatula and place on top.  Sprinkle with powdered sugar.  Cut into 6 pieces. Serve immediately.

Prepare, bake and serve German Apple Pancake recipe according to instructions, with the following ingredient replacements:

  • Replace ¼ cup brown sugar with 1 tablespoon brown sugar + 3 tablespoon stevia baking blend (or equivalent zero calorie sugar replacer).
  • Replace 1 tablespoon granulated sugar with 1 teaspoon granulated sugar + 1 teaspoon stevia baking blend (or equivalent zero calorie sugar replacer).
